Pork Tenderloin and Potatoes

This is seriously so good. The first time we had this as a family (family meaning Hayes family, pre-marriage) (and Mom, correct me if I'm wrong!) was at the Myers's house. I'm almost positive Mom got the recipe from Tina and its been a Hayes favorite since. And now a Watson favorite! :)

Seasoning for meat and potatoes:
1/3 c. olive oil
2 cloves of garlic (1 tsp. fresh, minced)
2 tsp. rosemary
2 tsp. thyme
(LOVE THOSE TWO HERBS!!)
1/4 tsp. pepper
1/2 tsp. salt

Mix together and coat/toss pork tenderloin in it.
(Set aside enough to coat the potatoes as well)


1/8 cut red potatoes and coat in mixture.


Add both meat and potatoes in a canola oil sprayed-dish. Bake at 375 degrees for 30-40 minutes or until meat is done.


This is so good and a great change-up from eating chicken and beef all the time! (Although I've done the same seasoning/recipe with chicken and that's really good, too!)


Troy loved this… but said "how much better would this be if the herbs and potatoes came from our back yard?!" haha… one day, T, one day… that boy wants a full-fledged garden, but for now, we settle for potted home grown tomatoes :)
