College Game Day and Corn Soufflé

To say I'm excited about today's game against the Florida Gators is really an understatement.

I've had ESPN's College Game Day coverage on the TV since we got up this morning.

Oh me, oh my.

So very much "Wish that I was on ole Rocky Top, down in the Tennessee hills."

But for now… here is a recipe.


A very good and easy-to-make side item--

Corn Soufflé 

Ingredients:
1 stick of butter, room temp
1 egg
1 c. sour cream
1 can corn, drained
1 can cream style corn
1 box Jiffy corn mix

Directions:
First, take butter, egg, and sour cream and mix together.
Next, add both cans of corn and box of Jiffy.
Mix well.
Spray baking/casserole dish with cooking spray and pour mixture in dish.
Bake for 1 hour at 375 degrees.
