To all Memphians: One thing you guys are missing out on is Publix.
Publix is a happy grocery store to me. Something about it seems pleasant. And I have this weird like of how it smells in there. It always smells so good to me… better than any other grocer.
Another good thing about Publix: when they have sales, they have really good sales. And you also can't forget their 1 cent item. It got me and Mom every time… I mean c'mon… its a penny! Who cares if you'll actually eat/drink/use it!
Yet another good thing about Publix: they have workers make recipes and sample them to the customers. When they do this, they have recipe cards available to you for you to take and be able to make the recipe yourself.
THE RECIPES THEY MAKE ARE ALWAYS DELICIOUS! (Now I'm thinking to myself… I need to get the Pesto Chicken one from Publix that my Mom's made… its yummy, too!)

Ingredients:
2 1/2 c. cooked, diced chicken
1 can Mexican style corn
1 can Rotel
1/2 c. Jiffy corn muffin mix
(sometimes Rob and I would add a can of black beans, drained and rinsed)

1/4 c. light sour cream (I used regular.)
1/4 c. mayo
1/4 c. shredded cheese (I added more than this!)
cooking spray
Directions:
Preheat oven to 425 degrees.
Coat baking dish w/ cooking spray.
Combine all ingredients except cheese in large bowl.
Transfer mixture to baking dish.
Bake 15 minutes.
Remove from oven, sprinkle cheese over top, and bake for 5 more minutes, or until cheese is melted.
