You know I like my chicken fried...

A couple years ago my cousin, Chase, lived with us for several months. Chase loves cooking, so during his time with us, he was always whipping something up in the kitchen.

One of my favorite things he would make was fried chicken. My family loved it so much we learned the recipe and how to cook it.

Troy and I would have it when we were dating, over at my house, so the other night I thought I'd make it to eat for the first time as a married couple.

Here is the recipe… very easy, but it gets kinda messy!

Chase's Fried Chicken

Ingredients:

(amount of ingredients depend on how much chicken you're making)
flour
salt
pepper
spice (I used cayenne pepper, but you can use any other "spicy" spice you have in your cabinet)
egg
milk
Frosted Flakes cereal
chicken tenderloins, thawed
canola oil

Directions:

Put 2 inches of oil in med-large pot on med-high heat.
Have chicken thawed, bowl of egg/milk mixture (I do the same ratio as if I'm making french toast), bowl of flour seasoned with salt, pepper, and "spice", and bowl of "grated" Frosted Flakes (I put mine in the blender) ready.


Take chicken tenderloins (I cut them in half--the smaller the pieces the faster they'll cook and the less likely they'll be undercooked) and dip them in the egg/milk mixture, then the flour mixture, then the cereal. Drop pieces in oil.


When you drop the chicken in the oil, the oil should start bubbling--if it doesn't, you need to raise the temp.

I only do 4-5 pieces at a time, flipping them half way through. When they start floating, they are close to being done, but I let them cook a little longer. You want to make sure they are COMPLETELY cooked through before you remove them!

Once pieces are done, I put them in the oven set at 200 degrees, just to keep them warm while I finish breading and dropping the other pieces of chicken.

Once all chicken tenders are cooked, depending on how large of a batch you're making, take those that are being "warmed" in the oven and join with your latest batch and serve with your favorite dipping sauces!
