An update on the newlyweds:
Not a whole lot around here actually. Just the usual house things, Olympics watching, and either working at a place of employment or searching for a place of employment. I'm sure you can guess who's doing which one.
BREAKING NEWS AT THE WATSON HOUSE: We have our trash can back! If I had kept you up-to-date with this saga, you'd be jumping up and down with joy right now. But you have no idea how great this news really is. I'll give you a little detail on the sitch. Well, in Shelby County, or at least in the area we live, you are responsible for getting your own trash service. I know in Hendersonville it is taken care of through taxes. Well here, thats not the case, so it was new news to us when we had to coordinate a business to come pick up our trash. The service was going great for the first month of living here… they came and got our trash every Friday morning. Well about a month ago, our trash can that they provided went missing. We called the service and they said they'd provide us with another one. We waited a whole week, up until the Thursday of the following week, and still no trash can. We knew we needed it for Friday AM because they use a truck/machine that takes the bin and dumps it. So I called and they said they could see the note on our account that we had a request and they'd "advance" our request. To make the long story short, for 3 weeks we never received our trash can and made phone calls just about every day about it. We weren't happy with them to say the least. Because think about it, when your can fills up in your house, what do you do with it if you don't have a bin to put it in? (One time we even just set it outside by our driveway, although we hated to because it looked "junky", and the next day some animal had gotten all in it and scattered trash all over ours and our neighbor's yards. Terrible.) So for the time being, we had just put the filled, smelly, dirty bags in our garage, creating a lovely aroma in our garage and attracting lots of friendly bugs and critters. BUT NOW, 4 WEEKS LATER, WE HAVE A BIN! HALLELUJAH!
The other night I tried this recipe my momma gave me. Its called Santa Fe Chicken and Rice and it was good, but most importantly, SUPER easy :) Thought I'd share…

Easy Santa Fe Chicken and Rice
Ingredients:
1 3/4 c. water
2 chicken bouillon cubes
1. cup salsa
2 tsp. cumin
1 pkg. "Knorr" Mexican Rice (or you could use Spanish Rice)
1 can black beans, drained and rinsed
1 can corn, drained
1 can chicken breast, drained
1/2 c. cheddar cheese
Taco Bell Taco Sauce (optional-- I added it because I had some left over from making the Taco Stuffed Shells)
flour tortillas, chips, sour cream
Directions:
Combine water, bouillon cubes, salsa, cumin, and mexican rice in large skillet. Bring to a boil, cover, and cook for 15 minutes.
After 15 minutes, reduce to low heat and add black beans, corn, and chicken. Stir and let cook for 5 minutes. (uncovered)
Add cheddar cheese and taco sauce and mix well.
Serve with flour tortillas with sour cream or use as topping for nachos.
It tastes like a burrito I'd get a Chipotle--very good.
Yesterday I cleaned/organized the house up and down. I'm talking sweeping, mopping, vacuuming, dusting, toilet cleaning, tub scrubbing, counter wiping, mirror/window windexing, laundry doing, appliance wiping, shower spraying, fresh sheets bed making… cleaning. I even dusted the blinds. I try to do all that about once a week… crank up the Pandora and get to work, although it wears me out… haha.
Yesterday I also painted my nails. I had gotten my nails done a few weeks ago and my polish was starting to chip, so I decided to take that polish off and repaint them myself. Well, kinda. I painted my left hand and Troy painted my right hand… and he did such a good job! Haha, he is such a good sport and such a great husband to me!
Today I spent my day with this face, or should I say, with these faces:
Yes, she made all those faces without being asked… what a silly girl!
I can't believe today is WEDNESDAY… these weeks are flying by! Troy will start up school so soon, I can't believe it! I'm anxious to see how much our "day to day" things will change with him being in school and studying all the time.
We're looking forward to a good weekend… dinner with a couple on Friday night and visitors coming Saturday!
