I've shared my Black Bean Salsa recipe on here before, but I haven't shared a recipe similar to it that I also like to make.
Its called Texas Caviar and its a really good mexican-type "dip"/salsa.
Ingredients:
1 green bell pepper, chopped
1 can corn, drained
1 can rotel, drained
1 c. Italian dressing
1 can black beans, rinsed and drained
1 can black eyed peas, rinsed and drained
1 bunch of cilantro, chopped
1/2 tsp. cumin
(not pictured 1/2 onion, chopped--we have been house/dog sitting so I packed this all from our home and took it over and forgot to bring the onion! It still tasted fine without it, but any other time, I would include it)
Mix all together.
Refrigerate for 2 hours prior to serving.
Serve with tortilla chips or Frito's scoops.
YUM! I especially love the fresh cilantro… a favorite of mine!!
