Because I recommitted to blogging...

This blog is still being weird with uploading pictures, but for now its working so I'm going to take advantage of it while it lasts!

I have lots lots lots to blog about… but for now I'm just going to post a recipe for yummy soup. Now that its so cold in the evenings, soup sounds great for dinner!

Baked Potato Soup

Ingredients
4 large potatoes, baked and cooled, scoop out middles
2/3 c. butter
2/3 c. flour
6 c. milk
3/4 t. salt
1/2 t. pepper
4 green onions, chopped
12 slices of bacon, cooked and crumbled
1 1/4 c. cheddar cheese
8 oz. sour cream

Directions:
Melt butter.
Add flour and stir til smooth. (its thick)
Cook 1 minute, stirring constantly.
Gradually add milk, stirring till thick and bubbly.
Add potatoes, salt, pepper, 2 T. onion, 1/2 c. bacon, and 1 c. cheese.
Cook till heated.
Add sour cream. Top with remaining onion, bacon, cheese when serve.
 (If too thick, add more milk)
