What a busy, fun, and eventful weekend we had! It was my MIL's birthday so they came down to visit and celebrate. Friday evening when they arrived we sang happy birthday, cut the cake (with our wedding cake server/knife set… special!) and opened presents!
Carrot Cake Recipe:
Cake:
2 cups flour
2 cups sugar1 tsp baking powder1 tsp baking soda1 tsp cinnamon3 cups shredded carrots1 cup vegetable oil4 eggsMix all together. Add 1 cup pecans if desired.Bake at 325 for 50-60 minutes. If you do 3 layers cook for less time (I did about 25 minutes because I did 3 layers.
Mix together.
Let cake layers completely cool before icing them.
Ready when toothpick comes out clean.
Frosting:1 8 oz package cream cheese1 box powdered sugar (or 1/2 a bag)1 stick butter or margarine2 tsp vanilla
Once cake is iced, sprinkle sides and around the platter with finely chopped pecans.
Saturday morning, much time was spent around the house. Troy and his dad changed Troy's oil and fixed the weed eater that had been giving him trouble.
We also did some yard work around the house. We asked them to bring their tools to do so since we don't have any.
A little friend I found as we were picking up bits and pieces of bushes Troy had trimmed off. Sure hope he doesn't make his way into the house!
After the trimming, pulling of some weeds, completely cutting down some dried out and dead landscape, and a couple bags of mulch… it looks so much better! I wish I had an before and after picture. The bush on the left was getting so out of control you could barely get around it coming down that sidewalk.
The rest of our day included getting pizza at Memphis Pizza Cafe, getting sno cones at Jerry's, playing a new board game T and I got as a wedding gift called "Zero" and going to see the new Batman movie.
Sunday we went and visited our 6th church since moving here, Germantown Baptist, had lunch at Huey's, then my in-laws headed back home. We had a great weekend… so thankful for the relationship I have with Troy's parents!
