I probably shouldn't so easily share how many times me and T have had these bad boys not only for dessert, but also for dinner.
But oh my, they are a favorite!
I try to justify the massive amounts of consumption by saying…
"Hey, its basically like me eating oatmeal for dinner/dessert… because when I make oatmeal I add sugar (actually… stevia… not 2 cups, holy 2 cups, of real sugar) and butter (actually, like a half spoon full… not a forth of a cup). And the cocoa powder… well really, there's hardly any caloric intake with that stuff. Only like 80 calories for the 1/4 cup. Not bad. And the milk. Oh, the milk is actually a great thing. See… I don't even drink milk… so I'm actually better off to eat these chocolaty peanut butter things and get some calcium. I mean, Troy is always on me about my calcium intake and my risk of osteoporosis as I age. So yeah, the milk in these is a good thing for me. And as far as the peanut butter goes… that's a great source of protein!"
And when I think about it that way… haystacks always seem to be a great food choice ;-)
But for real, these are a favorite of ours.
I'm surprised I haven't shared the recipe on here before, but I don't think I have!
And this, this is a straight from the Watson's kitchen recipe.
Troy is actually the one who taught me how to make them.
Haystacks
(also known as no bake cookies, cow patties (ewww), etc)
Ingredients:
1/2 c. milk
2 c. sugar
1/4 c. butter (this has to be like "can't believe its not butter" tub butter. I didn't know this and made them by myself, without T's assistance, and used 1/4 c. of a stick of butter and they were too dry!)
1/4 c. cocoa
1/2 c. peanut butter
3 c. oatmeal
Directions:
Combine first 4 ingredients in large pot and put on medium heat.
Bring it to a low boil and let it boil for 1 minute.
Remove from heat immediately and add peanut butter then oatmeal.
Stir until even and coated.
Scoop out onto wax paper.
Now here's where you get to make a choice.
T loves to eat them immediately with a fork while they're still warm.
I like to let them cool and harden a bit then eat them like a cookie.
The choice is yours.
But one thing you don't have a choice on is...
whether or not to make them.
its truly a must :)
