Thursday night, Whitney and Joey invited us to go to farmer's market at a farm park in Germantown. There were different vendors selling local fruits and veggies, plus live music, and food trucks. We enjoyed the abnormally-super-awesome July weather, ate dinner from the Hunger Monkey food truck, and bought some fresh produce.
We got fresh blackberries from Jones Orchard in Millington.
When we decided to get blackberries, we really had cobbler in mind :)
I used the basics from a peach cobbler recipe I had.
The only changes I made was the order in which I put the ingredients in the dish.
This time, I poured the fruit mixture first, then the flour mixture, then poured the melted butter on top.
One of my birthday gifts… already in use :)
Here's the recipe typed out and a little more legible.
Ingredients:
1 1/2 c. self rising flour
1 stick butter, melted
1/2 c. water
2 c. sugar, divided
4 c. blackberries
1 1/2 c. milk
Directions:
Preheat oven to 350 degrees.
Combine fruit, 1 c. sugar, and water in saucepan and mix well.
Bring to a boil and simmer for 10 minutes.
While fruit is simmering, combine remaining 1 c. of sugar, flour, and milk very slowly to prevent clumping.
In separate small bowl, melt the stick of butter.
Prep 3 qt. baking dish by spraying with canola oil.
When fruit mixture is ready, pour in prepped dish.
Pour in flour mixtures. (do not stir)
Last, pour melted butter. (do not stir)
Bake for 30-45 minutes.
While baking, batter will rise to the top.
