"Give credit where credits due."

And credit for dinner Friday night is due to Troy.
And it wasn't browning ground beef for spaghetti or grilling hamburgers.
This was a little more intense.
He prepped and cooked a whole chicken.

I had planned to do it that morning, but at the sixth hour in the morning, sometimes its hard to get out from the warm covers to rub your fingers all over cold, raw chicken. So the torch was passed to him by me leaving the recipe card on the island for when he awoke and said TEXT ME and I'll tell you where everything is. And he was successful. And I appreciated it. And him.

Here is the recipe he followed. JoAnna had told me about this crockpot chicken and said how delicious it was. So I wanted to make it and try it out. Rather, I wanted Troy to make it.

Ingredients:
1 whole chicken
3 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1/2 tsp. garlic powder
1/2 tsp. black pepper
1/2 onion, chopped
1/3 olive oil

Directions:
Clean and remove giblets and neck (I bought the chicken that already had this removed, but I (rather he) still rinsed it.)
Cover chicken in olive oil.
Rub spice mixture over chicken (ingredients listed above: salt to pepper)
Optional-Seal in bag and let marinate over night. We didn't do this.
Dice up 1/2 onion and put it at the bottom of the crockpot and then place chicken on top.
Slow cook on low for about 8 hrs.
Use thermometer to check to see if chicken is done (180 degrees)
Wiggle a leg and if its loose, its done.


We ate ours with red potatoes and peas.


And it was good! Way to go, Troy!
