Santa Fe Soup

I've read Kelly's Korner for about 2 years now but have never participated in any of her SUYL (Show us your life) "link ups", but I thought I'd give it a try!

Here is one of my favorite soup recipes. 

It's super easy, super good, and makes a lot so we like to freeze the leftovers for dinner another night.

Ingredients:
2 lbs of lean ground beef
2 packages of taco seasoning
2 packages of ranch dressing mix
1 small onion, chopped
2 cans rotel
1 can red kidney beans
1 can black beans
1 can pinto beans
2 cans white corn


Directions:
Brown and drain beef.
Add chopped onion and sauté. (I basically puree the onion in our electric chopper because T doesn't really like chunks of onion, but does like the flavor onion gives.)
Add meat in large pot and combine all other ingredients.
(Add a little water if necessary.)
Bring to a boil, then let simmer for 30 minutes.



I like to eat mine with shredded cheese on top and sometimes with tortilla chips.

Yum!
