Our date nights aren't on usual date night days like Friday or Saturday. No, we do it different 'round here. Our date night was on Wednesday.
Complete with dinner and froyo. We went to Yolos in hopes of getting gelato. Online they had various flavors posted saying they were available, but when we got there, there were only a few… none of which tickled my fancy, so I got the usual. Froyo. Good none the less.
Recent dinner choice: Chicken Enchiladas. Easy peasy lemon squeezey. (I taught Elisabeth that phrase today. If she ever repeats it I'm sure her parents will think, "now where did she learn that?!" haha)
Ingredients:
1 can cream of chicken soup
1 4 oz. can green chiles
1 1/2 PET milk
2 cans of chicken or 4 chicken breast, cooked
1 medium chopped onion
flour tortillas
12 oz. monterrey jack cheese
Directions:
Combine first 5 ingredients
Fill tortillas with mixture and a little cheese.
Roll tortilla seam down and place in casserole dish.
Cover with remaining chicken mixture. Top with cheese.
Bake at 350 for 20 minutes.
Serve with sour cream.
