Broccoli Cheese Soup

This cold, snowy, icy winter had me on a little soup kick. 

I have a couple of recipes for soups I've made over the last couple of months.
The first one I'm going to share this broccoli cheese soup recipe that is delicious!


Ingredients:

1 tbsp butter, melted
1/2 medium onion, chopped
1/4 c. butter, melted
1/4 c. flour
2 c. half and half
1/2 lb fresh broccoli, chopped
1 c. carrots, chopped
salt and pepper
1/4 tsp. nutmeg
8 oz. sharp cheddar cheese, shredded
2 c. chicken stock (or chicken bouillon cubes is what I used) 

Directions:

Saute onion in butter on stovetop. Set aside.
In pot, cook melted butter and flour using whisk on medium heat for 3-5 minutes, stirring constantly.
Slowly add half and half and continue to stir.
Add chicken stock and continue to stir.
Simmer for 20 minutes.
Add in the broccoli, carrots, and onions (sautéed).
Cook over low heat until veggies are tender (about 20-25 minutes).
Add salt and pepper. 
Soup should be thickened now.
Add in shredded cheese. Stir well until blended.
Stir in nutmeg and serve.
