Fruit Pizza

In honor of the 4th being tomorrow, I thought I'd share one of my favorite patriotic desserts.
I've made this many other times and included other fruits (banana, kiwi, mandarin orange), but by only including strawberries and blueberries, it creates a great red, white, and blue dish!

Fruit Pizza:

1 package of refrigerated sugar cookie dough
8 oz cream cheese
8 oz Cool Whip container, thawed
3/4 c. powdered sugar
fresh fruit (suggested: strawberries, blueberries, bananas, kiwi, mandarin oranges)

Place cookie dough on greased pizza pan or pizza stone.
Follow temperature setting on cookie dough package... probably 350 F.
Bake dough about 10 minutes or until golden.
While the dough bakes, combine sugar and cream cheese in large mixing bowl.
Mix until smooth.
Fold in Cool Whip.
Put cream cheese mixture in refrigerator while cookie bakes and cools.
WHEN COOKIE IS COMPLETELY COOLED, spread cream cheese mixture on top.
Cut up fresh food and place on top.
Put pizza in the refrigerator for an hour until chilled.
Then its ready to be served!

I think this is a great summer dessert for cookouts as well as a great item to serve at brunch.
