Hi, we're the Watsons

...and we love food.

This was one of our meals a few weeks ago and I've been wanting to share the yummy recipes :)


First up, the yummy poppyseed dressing on the salad:

Mom's Poppyseed Dressing

1 1/2 c. sugar
2 tsp. salt
2 tsp. dry mustard
2/3 c. apple cider vinegar
Mix above ingredients together.
Then add 3 tbsp of onion juice by grating an onion.
Add 2 c. of oil (vegetable or "salad" oil).
Add oil slowly, beating constantly until mixed well and thick.
Lastly, add 3 tbsp. of poppyseed. Refrigerate.

Mom's Poppyseed Chicken

(I think I've shared a poppyseed chicken recipe on here before, but it wasn't my Momma's. This one is better!)
(And yes, we ate lots of poppyseed in one meal. That night I told T I hoped he wasn't getting drug tested anytime soon!)

In small bowl, mix a can of cream of chicken soup with 1 cup of sour cream. Sprinkle in poppyseed.
In separate bowl, add a sleeve of crumbled Ritz crackers w/ 2 tbsp of melted butter drizzled over crackers.
This recipe calls for 6-8 cooked chicken tenderloins, shredded, but I usually use rotisserie chicken from Kroger as the shredded chicken. (We eat half of the rotisserie chicken the night before, then use the leftovers for poppyseed chicken :))
Layer soup mix, chicken, Ritz, and repeat.
Bake @ 350 degrees for 30 mins.

Mom's Homemade Ice-Cream

Lord have mercy, this is so good. And will likely be the cause of me getting diabetes.
We got a homemade ice-cream maker for Christmas and love using it!

1 qt. half and half
1 pt. whipping cream
1 can sweet condensed milk
2 tbsp vanilla (could use a little less)
1 1/2 c. sugar
rock salt
milk
Mix first 5 ingredients together and put in canister.
Fill up the rest of the canister with milk (to the required line marked on canister).
Layer ice and rock salt.
Turn maker on for about 25 minutes or until thickened. When thick, turn it off and remove mixer--this prevents the ice cream from hardening with mixer inside, making it hard to get the ice-cream out!
Put lid on and cover with towels to help insulate. Let it sit for 30 minutes before serving :)
